It is a medium-soft and balanced fruity olive oil because it combines the flavor of three varieties of olives. And that they complement each other perfectly and between them they confer their exceptional properties to the whole.
For the elaboration of this Oro del Desierto Coupage organic, the master of the mill selects the olive and the proportions that will be used for the production of this juice. Thus, these quantities vary each year, although the usual thing is that they are estimated at 20% Arbequina, 20% Hojiblanca, and 60% Picual.
Oro del Desierto Mill
The mill that produces this extra virgin olive oil is called Rafael Alonso Aguilera sl, a family business dedicated to olive oil for more than seven generations. This mill is located in the desert of Tabernas, province of Almería (Spain). A peculiar climatology and orography of the area makes this extra virgin olive oil have exceptional qualities. Likewise, the olive groves have been certified as organic since 1995. And efficiency and sustainability is a “sine qua non” policy in the operation of the oil mill.
