La Laguna Selecta Olive Oil
The aroma and flavor of this EVOO is aromatic, stable and has an excellent taste on the palate, ideal for any type of dish. Its aroma is fruity green in medium high intensity with a touch of apple and a great intensity of green grass. Sweet and fluid on entry, medium bitter and medium high spicy. In addition, it is a filtered juice that has a very clean appearance.

On the farms where the olives are harvested, the olive trees are found at an altitude of between 300 and 700 m. And it is a traditional mountain olive grove with a high slope. The area has a continental Mediterranean climate with average rainfall and marked temperature fluctuations. And the soil is clayey with a high calcium carbon composition. Likewise, the harvesting of the olives takes place in the month of November as it is a green olive oil, and the techniques used are mechanized and manual shaking.
Once cold milled, as it must be in the case of an EVOO, it is kept in tanks with an inert atmosphere in order to preserve the olfactory-gustatory complexity. Or in other words, its organoleptic properties. And it will only be packed as orders are produced, in order to reduce the time possible from the moment it is packed until it reaches the customer.
La Laguna is the original brand of its producer, Sucesores de Hermanos López. An oil mill with more than a century and a half of existence and located in the town of Luque (Córdoba). On the other hand, this brand gets its name from the farm where the olives are harvested to obtain this juice: La Laguna del Salobral or del Conde.
