Surely you wonder: how many types of olives are there? I already tell you that there are many types of olives that are used to produce olive oil. In fact, it is no coincidence that Spain is the world\u2019s leading olive oil producer.  <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">In this post we will not know all the varieties of olives, apart from naming them. But we will learn something about those that predominate in the <strong>Sierras Subb\u00e9ticas Natural Park and surroundings<\/strong>, in the southeast of the province of C\u00f3rdoba.<\/p>\n\n\n\n<h2 class=\"has-black-color has-text-color wp-block-heading\">Olive varieties<\/h2>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">As we have already mentioned, there are many <strong>types of olives in Spain<\/strong>. The most popular and that are dedicated to the production of olive oil are: the alore\u00f1a, arbequina, blanqueta, cordobesa, cuquillo, empeltre, gordal, hojiblanca, lech\u00edn, manzanilla, obreg\u00f3n, picual, picuda, ramona, serrana, verdejo and verdial. <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">But we will focus on five of them: <strong>arbequina<\/strong>, <strong>lechin<\/strong>, <strong>picual<\/strong>, <strong>hojijblanca<\/strong> and <strong>picuda<\/strong>. The last three are varieties of olives that predominate naturally in the <strong>Sierras Subb\u00e9ticas Natural Park<\/strong> and its surroundings. And the <strong>Arbequina<\/strong>, originally from Catalonia and Aragon, in recent years has been planted a lot in Andalusia for its great adaptation and performance, as well as for its extraordinary characteristics. Besides <strong>Lechin<\/strong>, wich we add for being one of the most extended olive variety in Andalusia, specially in Cordova, Seville and Granada. Althought of this variety we only have one evoo for cooking, the <a href=\"https:\/\/www.latinajadelgourmet.com\/en\/product\/senorio-del-sabinal\/\"><strong>Se\u00f1orio del Sabinal<\/strong><\/a>.    <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">From these five kinds of olives, the olive oil that we sell in La Tinaja del Gourmet is produced, <strong><a href=\"https:\/\/www.latinajadelgourmet.com\/en\/premium-olive-oil\/\"><u>Premium EVOO<\/u><\/a><\/strong> and <strong><a href=\"https:\/\/www.latinajadelgourmet.com\/en\/olive-oil-for-cooking\/\"><u>EVOO for cooking<\/u><\/a><\/strong> of excellent quality.<\/p>\n\n\n\n<h2 class=\"has-black-color has-text-color wp-block-heading\">Arbequina olive<\/h2>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">This olive, typical of Catalonia and Aragon, has spread in a very important way and not only in Spain. This is due to its great adaptability both to different soils and to different climates. <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">In addition, it is an olive that is easy to harvest and has a high yield, since despite its small size the oil content that is extracted is high.<\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">Its name, Arbequina, comes from the town of Arbeca, in the province of Lleida. Its shape is short and elliptical, medium-small in size and has a green color that tends to yellow as it matures.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><a href=\"\/en\/olive-oil-varieties\/arbequina-olive-oil\/\"><img decoding=\"async\" src=\"https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceituna-arbequina-e1590057613110.jpg\" alt=\"arbequina olive\" class=\"wp-image-6524\" width=\"404\" height=\"340\" srcset=\"https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceituna-arbequina-e1590057613110.jpg 686w, https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceituna-arbequina-e1590057613110-475x400.jpg 475w, https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceituna-arbequina-e1590057613110-500x421.jpg 500w\" sizes=\"(max-width: 404px) 100vw, 404px\" \/><\/a><figcaption>Arbequina olive<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">The oil that is extracted from this olive, called <strong><a href=\"\/en\/olive-oil-varieties\/arbequina-olive-oil\/\"><u>Arbequina olive oil<\/u><\/a><\/strong>, is very soft, sweet and aromatic. In addition to having a fruity aroma and flavor, with a slight apple flavor, herbaceous green, very little bitter and spicy. Thus, it is the opposite of Picual olive oil, for example, which is an olive oil with a strong, very bitter taste.   <\/p>\n\n\n\n<h2 class=\"has-black-color has-text-color wp-block-heading\">Picual olive<\/h2>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">Of all the types of olives, the Picual olive is the most cultivated, with Ja\u00e9n being the province where it predominates the most. C\u00f3rdoba and Granada are also provinces where it is widespread. <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">The name of picual comes from the shape of the olive, ellipsoidal, with a pointed end. Its size is medium and when it matures its color is black. <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><a href=\"\/en\/olive-oil-varieties\/picual-olive-oil\/\"><img decoding=\"async\" src=\"https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceituna-picual-e1590054276853.jpg\" alt=\"\" class=\"wp-image-6776\" width=\"475\" height=\"357\"\/><\/a><figcaption>Picual olive<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">It is a high-yield olive as it has a very high oil content, as well as a high percentage of <strong>natural antioxidants<\/strong> compared to other kinds of olives. Its strong and bitter taste makes us notice it, an unmistakable feature of <strong><a href=\"\/en\/olive-oil-varieties\/picual-olive-oil\/\"><u>Picual olive oil<\/u><\/a><\/strong>. <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">In addition, another very important characteristic of Picual olive oil is that it is highly stable. Thus, this attribute influences its storage as it is more resistant to oxidation. And to cook it better withstands high temperatures.<\/p>\n\n\n\n<h2 class=\"has-black-color has-text-color wp-block-heading\">Hojiblanca olive<\/h2>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">The Hojiblanca or Lucentina olive is a variety that predominates especially in the province of C\u00f3rdoba. In fact, the name of Lucentina comes from being the town of Lucena where it is more widespread and where the <strong><a href=\"https:\/\/dolucena.es\/\" target=\"_blank\" rel=\"noreferrer noopener\">Denomination of Origin of Lucena<\/a><\/strong> originated. Likewise, the name hojiblanca is due to the white color of the olive leaf.  <\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><a href=\"\/en\/olive-oil-varieties\/hojiblanca-olive-oil\/\"><img decoding=\"async\" src=\"https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/03\/aceituna-hojiblanca.jpg\" alt=\"hojiblanca olive oil\" class=\"wp-image-6775\" width=\"522\" height=\"326\" srcset=\"https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/03\/aceituna-hojiblanca.jpg 800w, https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/03\/aceituna-hojiblanca-640x400.jpg 640w, https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/03\/aceituna-hojiblanca-768x480.jpg 768w, https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/03\/aceituna-hojiblanca-500x313.jpg 500w\" sizes=\"(max-width: 522px) 100vw, 522px\" \/><\/a><figcaption>Hojiblanca olive<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">This variety of olive is medium in size and symmetrical in shape. When it has reached its optimum ripeness state, it acquires a red-violet color.<\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">The olive oil that is produced from the Hojiblanca olive is called <strong><a href=\"\/en\/olive-oil-varieties\/hojiblanca-olive-oil\/\"><u>Hojiblanca olive oil<\/u><\/a><\/strong>, that has a great variety of flavors and aromas.  <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">As for its bitter taste, it is very balanced. Neither very bitter nor very soft, just right. At the end, the characteristic hotness of olive oil is appreciated.<\/p>\n\n\n\n<h2 class=\"has-black-color has-text-color wp-block-heading\">Picuda olive<\/h2>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">This olive, called picuda or carrasque\u00f1a, is characteristic of the area of the Sierras Subb\u00e9ticas Cordovan Natural Park and surroundings. And specifically in the areas of <strong>Priego de C\u00f3rdoba<\/strong> and <strong>Baena<\/strong>, in the province of C\u00f3rdoba. In fact, it is included in both Protected Denominations of Origin.   <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">Its size is large, and it gets its name from the asymmetrical shape of the olive, ending in a beak or nipple. In addition, it is an olive with a more minority area of cultivation compared to the Hojiblanca olive or Picual olive, for example. <\/p>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">Even so, its cultivation area extends through the provinces of Granada, Ja\u00e9n and M\u00e1laga, as well as C\u00f3rdoba, without becoming the predominant variety. One of the reasons it is planted a lot with other varieties is to aid pollination.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><a href=\"\/en\/olive-oil-varieties\/picuda-olive-oil\/\"><img decoding=\"async\" src=\"https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceitunas-picudas.jpg\" alt=\"picudas olives\" class=\"wp-image-6777\" width=\"509\" height=\"336\" srcset=\"https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceitunas-picudas.jpg 673w, https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceitunas-picudas-605x400.jpg 605w, https:\/\/www.latinajadelgourmet.com\/wp-content\/uploads\/2020\/05\/aceitunas-picudas-500x331.jpg 500w\" sizes=\"(max-width: 509px) 100vw, 509px\" \/><\/a><figcaption>Picuda olive<\/figcaption><\/figure><\/div>\n\n\n\n<p class=\"has-very-dark-gray-color has-text-color has-medium-font-size wp-block-paragraph\">Likewise, the <strong><a href=\"\/en\/olive-oil-varieties\/picuda-olive-oil\/\"><u>olive oil produced by this Picuda olive<\/u><\/a><\/strong> is delicate and fruity, with light flavors and aromas that are reminiscent of exotic fruits in addition to tomato, apple or almond. It is an olive oil that is highly appreciated not only in Spain, but also in the rest of the world. And there are many prizes won by olive oils from this variety of olives.  <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Lechin<\/h2>\n\n\n\n<p class=\"has-black-color has-text-color has-medium-font-size wp-block-paragraph\">This olive, concentrated in the provinces of Seville, Granada and Cordova, owes its name to the whitish color of its pulp, similar to milk. It is named in different ways, depending on the area. Thus, we can recognize it as Lech\u00edn de Sevilla, Lech\u00edn de Granada, Ecijano or Zorzale\u00f1o.   <\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-medium-font-size wp-block-paragraph\">The lech\u00edn olive tree is highly resistant to drought and adapts very well to limestone soils, which are very unfavorable to cultivation. Harvesting this variety of olive is very expensive and difficult since the fruit is very well attached to the tree, and manual harvesting is necessary. Due to the latter, the area cultivated by this olive tree has decreased in recent years, since it is not viable with a mechanized harvesting, which is what is demanded in modern agricultural production.   <\/p>\n\n\n\n<p class=\"has-black-color has-text-color has-medium-font-size wp-block-paragraph\">Lech\u00edn olives are elliptical in shape, curved on the back, and weigh approximately 3 grams.
