It is an ideal extra virgin for frying or cooking, or taking raw with toast or dressing salads, for example.
Origin and production
The olives that are used to produce this olive oil come from olive groves that are found in the Sierras Subbéticas Natural Park.
Due to the characteristics of this Natural Park, the mountain olive grove predominates on its land. This mountainous terrain and its climate make this olive oil a very unique and highly valued juice.
Likewise, the olives that are selected to produce this EVOO are of the Picuda, Hojiblanca and Picual olive varieties. The olives are harvested mature and thus their fruity flavor is light, especially recommended for cooking or frying.
Once the olives arrive at the oil mill, they are ground, and then the oil is extracted and filtered. Finally, it is stored in stainless steel tanks so that the juice does not lose its properties.
